Pancetta and Spinach: The Perfect Tapas
Pancetta, pine nuts, and spinach combined together make a great tapas! There are little ingredients needed and large flavors produced. My husband really liked this dish. A plus? It is gluten free! I threw this together after watching the Nadal vs. Djokovic match that basically lasted for 5 hours. I know that is old news but Djokovic has credited some of his new found success on the tennis court to his new gluten free diet. Hey, it can’t hurt our tennis game. Vamos Rafa!!!! Next time!
What you need:
Garlic Olive Oil
Salt and Pepper for taste
Saute pancetta until slightly brown with a very small dot of garlic flavored olive oil. The fat from the pancetta is more than enough to flavor the spinach and pine nuts. Saute altogether until spinach is cooked and a bright green. Add salt and pepper for taste! Serve.
We added mashed potatoes to the meal and it was a perfect combination! Enjoy! xo
