Egg Salad Sandwich with a Twist

I love re-inventing traditional recipes. Egg salad is a favorite lunch sandwich for kids or a traditional tea party sandwich – a great finger food.
Just by adding a few extra ingrediants this sandwich is transformed into something a little “fancier.”

4 large hard boil eggs, cooled and de-shelled
1 Table Spoon Stone Dijon Mustard
1\4 cup Mayonnaise
1 1/2 tablespoons finely chopped Shallot
1 Tablespoon fresh Tarragon chopped
Fresh ground Pepper
Sea Salt for taste

Mash eggs with fork and mix together all ingredients. Build sandwich as desired. I used a pita instead of traditional sliced bread with lettuce and tomatoes.

Serves 2-3 people. Double the recipe for a larger party.
